I really love pancakes but since I am following a gluten free diet I am always craving sweets and pretty much everything that has wheat flour in it.
Therefore I thought it is time to experiment with some pancakes made of almond flour and guess what? They are absolutely delicious and super easy to make and require only few ingredients plus the toppings of your choice.
For one serving, simply mix one egg (beaten like for scrambled eggs) then add a heaping table spoon of almond flour,. half a teaspoon of baking powder, a pinch of salt and there you have it, Yummy pancake batter!
I made two portions for me this time because… why not??? I topped mine with cherries, maple syrup and dark chocolate and bananas, honey and dark choclate! So so yummy!
